About Project

Problem: What problem is this project trying to address?

As humans keep settling in cities, we keep detaching ourselves from nature, the natural cycles of farming and the magic of growing food. It is becoming increasingly difficult to know where our food is coming from, and which are the best choices we need to make to benefit our health and the environment. Food labeling as we know it lacks the clarity to provide transparent information which increases the overall problem of understanding what we eat.

Solution: What is the proposed solution? Please be specific!

Raising awareness about where our food comes from, what it takes to get from farm to table, and what goes in it in this process, is fundamental to transform the way we eat. This awareness should come in the form of practical education in schools, teaching our children to read and understand Nutritional Fact labels, how to recognize hidden sugars and excess salt in the products bought, and rediscovering the natural tastes of fruit and vegetables by learning how to cook with them. This practical lessons can also be extensive to adults, in an attempt to change the eating habits of the whole family, and workplace, in order to reduce obesity and overweight rates, which Chile currently shows at 25% and 67% respectively.

When we talk about impacting school children we have developed two workshops applicable to a learning environment. The first one has to do with reading and understanding the nutritional information on labels, as a way of giving young children an effective tool to self determine the level of nutrients in their food. The second one relates to the rediscovery of natural food through cooking, by imparting cooking classes from early ages at school. Both solutions make a difference in the way these children will relate to food at young age and as future adults, bringing more consciousness into their choices at the supermarket, and influencing their families and peers in the same trend of sustainable consumption.

Impact: What is the impact of the work to date? Also describe the projected future impact for the coming years.

Ignorance about the food system in Chile is causing a twofold problem. On one hand, obesity rates are rapidly increasing because people do not understand the poor quality of the food they are eating. And on the other hand, people do not know what are the impacts of their food choices beyond just price in the supermarket till. The only way to change the current patterns of consumption in the food industry to more sustainable practices, is through education, raising awareness, and creating practical instances where people can learn and see the difference with their own eyes. Transparency and information are key elements to achieve this, and we believe that B Foods is the right path to do so. Currently there is no one doing this work in Chile, and it is something that will certainly help to shape the nutritional trends of the future.

Financial Sustainability Plan: What is this solution’s plan to ensure financial sustainability?

Practical classes and workshops in schools, universities. Experiential events for companies. Paid for research and consultancy projects. Consultancy for the food industry on how to improve their practices. B Foods pratical lab, which sells food products developed under the same principles we teach.

Marketplace: Who else is addressing the problem outlined here? How does the proposed project differ from these approaches?

Currently there is a government program called "Elige Vivir Sano" (Choose to live healthy), focused on signaling what are the best foods that can be eaten in order to attain good health. However, this program does not address the other issues we wish to solve, like the problems around information transparency on labels, the problems with the food supply, the impacts on the environment of our consumer choices and how this all relates to good health as well, but on a more global scale, where the environment and the ethics of food production are also involved in the solution.

Founding Story

Cooking has always been a huge passion for me, and I for years I have thought of ways to add value to the food I prepare beyond taste. I have wanted to tell stories through food, by engaging the producers, by highlighting how the food has been cultivated and processed, and by how it goes from farm to table. However, I find myself finding it harder everyday to do so, due to the lack of information about where food comes from. I want to change this, and I want to be able to make that knowledge available for everybody, specially for younger generations that will have the chance to continue the change we have started for them. Food is part of our basic needs, but not just any food; soul food, ethical and sustainable in time.
